Elizabeth Christensen, age 81, of Marshall, Minnesota, died on Wednesday, May 27, 2020, at the Minneota Manor Care Center. Private Family Funeral Services are on Monday, June 1, 2020, at the Hamilton Funeral Home in Marshall. A live stream of the event will be available on the funeral home website, beginning at 1:00 p.m. The service recording will also be accessible at any time. Interment will be in the St. Clotilde Catholic Cemetery in Green Valley, Minnesota.

Elizabeth Mary Christensen was born on April 9, 1939, in Marshall, Minnesota, to Arthur and Emma (Hoorelbeke) Vierstraete. She grew up on the family farm. Elizabeth received her first communion and was confirmed at the St. Clotilde Catholic Church in Green Valley. She graduated from the Marshall High School with the class of 1957.  On January 3, 1959, Elizabeth was united in marriage to Ronald Christensen at St. Clotilde Catholic Church in Green Valley. To this union 4 children were born: Gloria, Diane, Anita, and Brian. They raised their family in Pipestone and then Green Valley.  She was a devoted homemaker and mother, quiet and simple, and has been called a stubborn Belgian. Elizabeth grew up as a farmer’s daughter and always enjoyed being outdoors, caring for animals, and tending to a flower garden. She especially treasured spending time with her family.

Elizabeth died peacefully at the Minneota Manor surrounded by her family on May 27, 2020, at the age of 81 years, 1 month, and 18 days. Blessed and eternal be her memory.

Elizabeth is survived by her 4 children, Gloria Lavoie of Green Valley, Diane Morris of Fort Madison, IA, Anita (Terry) Coens of Green Valley, Brian (Jodi) Christensen of Slayton; special niece, Donna (Brad) St. Aubin of Cottonwood; grandchildren, Preston Lavoie (special friend, Olivia Sik) of Milroy, Dustin Lavoie (Daeshia) of Willmar, Jason (Danielle) Nielsen of Yelm, WA, Melissa (Ruben) Medina of Elgin, OK, Matthew Nielsen of Fort Madison, IA, Brandon (Shelby) Coens of Marshall, Darren Coens of Marshall, Austin (Hannah) Christensen of Luverne, Adam Christensen of Spirit Lake, IA, Shelby Christensen of Slayton; great-grandchildren, Liam Lavoie, Chet Nielsen, Oceana Nielsen, Christina Medina, Carson Medina, Evangeline Nielsen, Kaden Coens; special great-nephews, Brady St. Aubin (special friend, Jean), Cody (Whitney) St. Aubin; and a dear sister, Elsie Capp of Marshall.  Elizabeth was preceded in death by her parents, Arthur and Emma (Hoorelbeke) Vierstraete; husband Ronald Christensen, grandson, Weston Lavoie, son-in law, Kenneth Morris; and 5 brothers; Maurice, George, Julius, Cyriel and Camiel Vierstraete.
