The Minnesota Department of Health is urging residents to dispose of recalled organic carrots after they were linked to an E. coli O121 outbreak.
Epidemiologist Carlota Medus says, “The E. coli outbreak associated with carrots. It’s a type of E. coli, and it’s called E. coli O121. We have five cases in Minnesota who ate organic carrots, just like the regular carrots and or baby carrots. So those carrots got recalled.”
The illnesses have been traced to organic carrots purchased from Costco, Target, and Hy-Vee, under brands including Good & Gather, Bunny Luv, and Cal-Organic.
Medus also described symptoms to watch for:
“The symptoms of E. coli are typically diarrhea, often bloody. You basically get sick about three to four days after the food that’s contaminated… and they typically last quite a few days. You’ll have like, three to five days with diarrhea, sometimes a little longer.”
